Measures

Cup sizes, accuracy and sources

US: cup ≈ 236.588 ml, tablespoon ≈ 14.787 ml, teaspoon ≈ 4.929 ml. Metric: cup = 250 ml, tablespoon = 15 ml, teaspoon = 5 ml. Check your recipe’s measure size.

These are estimates: packing, brand, moisture and temperature change the weight. Use level measures; weigh ingredients when accuracy matters. Milk uses about 1.031 g/ml and water about 1 g/ml.

How it works

Cups and spoons measure volume; grams measure mass. Ingredients have different densities, so the same cup holds different weights of flour, sugar or honey. The conversion is mass = volume × density, with volume in millilitres and density in grams per millilitre.

For example, King Arthur Baking lists 120 g for a US cup of all-purpose flour. Two US cups therefore weigh about 240 g. Baking ingredient estimates come from its Ingredient Weight Chart: https://www.kingarthurbaking.com/learn/ingredient-weight-chart. Milk uses the midpoint of the FAO’s published density range (1.028–1.034 g/ml at 15°C), while water uses NIST’s approximate 1 g/ml.

The US customary cup is about 236.588 ml; the metric cup here is 250 ml, with 15 ml tablespoons and 5 ml teaspoons. US cups are the default. Packing and ingredient varieties matter more than extra decimal places: flour is loose, brown sugar packed, rice uncooked and salt fine table salt. Prefer the recipe’s own gram weights or a scale.
